100g SwoleFoods Prep Pack Lean Mince, defrosted

100g Tortilla Chips

40g Cherry Tomatoes, diced

20g Red Onion, diced

Half an Avocado

40g Lite Sour Cream

Juice of 1 Lime

1 Handful Coriander

30g Grated Cheese

Cooking Instructions

1. Heat your oven on high using the grill function

2. While the oven is heating, assemble your nachos in an oven proof dish. Lay out tortilla chips and crumble over mince in small chunks. Top with tomatoes, onion and cheese.

3. Place dish under the grill for a few minutes until the cheese has melted and turned golden brown. Be careful not to leave it under to for too long as it can burn quickly!

4. Set aside to cool, and top with mashed avocado, sour cream, coriander and lime juice
