Chicken, Mandarin and Pecan Salad Recipe

A beautiful, fresh winter salad with bursts of sweetness from segments of mandarin and added crunch from pecans. A simple way to add elegance and variety to your meal prep.

Ingredients List

100g SwoleFoods Prep Pack Chicken Breast, sliced & warmed through

60g Baby spinach

40g Pecan halves

15g Red Onion, sliced in to rings

1 Mandarin, cut in to pieces

1 tsp Dijon mustard

1 tsp Honey

2 Tbsp olive oil

2 tsp lemon juice

Salt & pepper to taste

Cooking Instructions

1. Combine mustard, honey, olive oil, lemon juice, salt and pepper in a small bowl and set aside.

2. Assemble salad using spinach leaves, onion, pecans, mandarin and warmed chicken breast.

3. Add salad dressing and toss till well evenly coated.
