Fresh Chicken Pasta Salad Recipe

This pasta dish is light, fresh, high in protein and simple to assemble. Perfect as a fast and delicious post workout dinner.

Ingredients List

100g SwoleFoods Prep Pack Chicken Breast, sliced

150g Cooked Fusili Pasta

40g Cherry Tomatoes, halved

15g Red Onion, sliced

1 Tbsp Olive Oil

1 tsp Balsamic Vinegar

1 Clove Garlic

1 Handful Baby Spinach

1/2 an Avocado

Fresh Basil, finely sliced

Cooking Instructions

1. Bring a pot of salted water to a boil and cook your favourite pasta according to the packet instructions.

2. While the pasta is cooking, finely slice one clove of garlic and add to a pan with a few drops of oil. Cook on a medium heat until golden brown and aromatic.

3. Transfer drained pasta to a bowl and add chicken breast, tomatoes, onion, oil, vinegar, garlic, spinach, avocado and basil. Toss a few times to incorporate and serve.
